GINGER-ORANGE MARINATED BONE-IN TURKEY BREAST

With the holidays quickly approaching everyone is scrambling to find recipes to reinvent the boring traditional dishes. This recipe will turn that regular dry turkey into a foodgasm in your mouth.

2 clove garlic minced 2 tsp vegetable oil 2 tsp ground ginger 1/2 tsp crushed red pepper flakes 1/2 tsp ground cumin 1 tsp dark sesame oil 1/2 cup of orange marmalade 1/2 cup orange juice 2 tsp grated orange peel 1 tbsp soy sauce 1 6-7 lb. bone in turkey breast In a small saucepan heat vegetable oil over medium low heat. Add garlic cook 15 to 30 seconds until hot not brown. Reduce heat to low. Stir in ginger, red pepper flakes, cumin and sesame oil. Cook and stir 30 seconds until very hot. Blend in marmalade; cook and stir to melt marmalade. Remove from heat; stir in orange juice, peel, and soy sauce. In a large resealable bag, combine turkey breast and orange juice mixture. Seal. Refrigerate and marinate at least 8 hours, turning occasionally to marinate evenly. Preheat oven to 350°F remove turkey breast; discard marinade. Place turkey breast in shallow roasting pan. Add 1/2 cup water or chicken broth. Cover and roast 1 hour. Remove cover; add more water or broth as needed. Roast 1 hour to 1 hour and 15 minutes more or until thermometer registers 170°F basting occasionally with pan drippings. Let's stand loosely covered, 5 to 10 minutes before carving. Serves 10 people. Per serving 620 calories, 4 g of carbohydrates, 91 g of protein, 24 g of fat, 0 g of fiber, 235 mg cholesterol, 249 mg sodium.
